Matcha with Coconut Oil

2013-08-09 12.45.09I LOVE coconut oil, just like everyone else who gave it a try and hasn’t looked back since. And I just keep finding more things to use it for, from cooking, to skin care to medicinally.  So you know when I heard about using it in your coffee I got right on that. My morning beverage of choice is Matcha Green Tea and so I made a pot with some Unsweetened Vanilla Coconut/Almond Milk and then whisked in a tablespoon of organic, unrefined virgin coconut oil. I left it extra spotty in the photo for effect, but when you give it a good whisk (or blend) it becomes frothy and creamy. The naturally mild sweetness of the oil adds a really nice flavor and leaves a rich slickness on your lips with every sip. But that’s not the end of it, as is usually the case with coconut oil, there’s also great health benefits to starting your day with a cup or two. As it turns out consuming a healthy dose of fat (like the kind in coconut oil and avocado) in the morning gets the metabolism burning, offers long term energy and helps to put our hormones in check getting us ready for a full day.

I’ve also tried this in herbal teas with just water like Lemon Ginger and Green Tea Blends and really enjoyed it and it’s great added in to hot chai and adds a little extra umph to coffee replacements like teeccino.

Chia Hemp Breakfast Pudding

3 TbS Chia Seeds (I used Navitas Raw Organic Chia)

1/2-3/4 C. Hemp Milk (or your preferred dairy alternative)

Fresh Berries

*stir or shake well. Let sit for 15 or more minutes.( I’ve been making it at night for the morning) Stir/shake again, add berries and get your spoon.

Chia seeds are one of many ancient super foods that are making their way back into more and more foods and understandably as these little nutritious nuggets have ounce for ounce as much omega 3 as salmon and a pretty impressive count for vitamins, minerals and protein. They are also very interesting on the tongue. enjoy.

 

Pesto Eggs N Toast

Mmmmfff…..this is the sound I, and everyone in earshot, hear me make when I am truly enjoying my food. There are a number of dishes that evoke this sound. A sound that is often paired with closed eyes and slow chewing. And despite my love for the slow simmered and complexly flavored, many of the things that make me go mmmm are also the most simple. Eggs n’ toast, if done right, is one of those things. I like my eggs over medium, leaving them plenty messy but no slimy white stuff. My go to version is just a piece of gluten-free toast with a healthy slathering of coconut oil and topped with one salted, peppered and fried egg. It’s fast, easy and completely satisfying. Then one day, I was having a leisurely brunch with friends at Lexi Lou’s in Edison Park in Chicago and it was there on that day that I had a bite of a pesto scramble and was forever changed. Pesto and eggs? Hell yes.

So this is how my already delectable breakfast staple evolved into a mind blowing breakfast sensation.

Toast your toast and fry your egg. Then while you dress your toast with coconut oil and pesto, put a small handful of spinach in with your egg and cover for just a min so it wilts a bit. Now assemble in a hot drippy stack and enjoy.

CACAO POW: Vegan Chocolate Shake

I have been working towards getting back on the “Eat Right and Feel Great” train and always find it helpful to use sharing and teaching what I am doing as motivation to keep doing it! I am also adamant about enjoying what I consume, as I feel it is a really important part of  total health. It’s never made sense to me to make being healthy a chore or to force myself to consume things that I don’t enjoy. Truth is, the act of eating and how you approach it has health benefits all in it’s self and by combining deep satisfaction with high quality food I believe that you increase those benefits exponentially.  Here is a quick How to Video/Recipe for a Healthy Vegan Chocolate Shake that I call the Cacao Pow. This drink  is a perfect example of my theory as it is both, deeply satisfying in it’s decadence and jam packed with nutrition.

 

Recipe

8 oz Almond Milk

2 Tbs Cacao Powder

2 Tbs Almond Butter

1Tbs Coconut Oil

1 Banana

1 handful of ice

The Summer Time Italian

Ah yes, I finally went grocery shopping

which allows me to write a bona fide Food Porn/Recipe Erotica Post.

For those of you who are new, the term Food Porn was coined for me by my friend Erin &  basically sums up the act of shamelessly photographing our culinary delights sizzling in our pans, splayed out on our plates and dripping off our forks. (and as it turns out, is also a really nice .com )  and since I don’t think it’s too much to ask for your food to be easy AND interesting, adding some Recipe Erotica to the mix seemed only natural. My goal is to provoke your appetite, make you slightly uncomfortable, let you wonder if I mean what you think I mean and ultimately make you glad you held out until the end…. and so it goes.

Flat Bread Pizza and Sangria

This meal, perfect for a summer night, includes lots of fresh produce that can easily found at your local market.

for the pizza collect the following items

whole grain flat bread

olive oil

pizza sauce (pesto would also be tasty)

veggies of your choosing

fresh mozzarella (I found some marinated and in perfectly bite sized balls)

and the quintessential topper offer for easy Italian

prepare a skillet with olive oil and heat, chop your toppings season and saute. Remember that the more you work your veggies in the heat, the more of their juices they expel. So don’t be shy and make more than you think you might need.

I almost always cook my toppings first so they may release their liquids before putting them on the crust. This way once I assemble my pizza all I really have to do is melt my cheese and the crust stays crisp.

while this cooks, get out these things

Red wine of your choice

something delish and sparkling

fresh berries and an orange

a bit ( and I mean a bit or you’ll hit the floor) of Grand Marnier

Mines the stuff in the jar labeled “strawberry jam” as though it made it any less shady

for my friend V and I to do a booze hand off in a parking lot. That shit is expensive:)

I put some berries, the grand and some juice from the orange in my glass.

add the wine and sparkly in parts as equal as Jenna Jameson’s

trow in ice and enjoy.

By now your toppings are perfect and ready for copulation

I simply slid  these in my toaster oven, set it to broil.

As for time, just listen, you’ll know when they’re ready. Then wait just a minute more…….

and pull them out.
